THE Trick You Need to Cook Asparagus Without Damaging It.

With sunny days, it's asparagus season!

Ok, it's true that it's not always cheap but what's good!

And then, we have the right to have fun sometimes, right?

And it really is the spring recipe par excellence!

In a salad, as a starter, in a flan... it's delicious.

Not to mention that it is a healthy vegetable, light and full of fiber.

Usually, it's not really me who finds you cooking tips.

This time it's kind of the same, because it's actually a trick from my mother-in-law.

I discovered it last weekend during a family meal in Alsace, precisely the region of asparagus. Nice, isn't it?

Curious by nature, I went for a walk in the kitchen before dinner.

This is where I saw the asparagus gently cooking in a (very) large pot of water.

So far, nothing out of the ordinary, but wait, don't go so fast, the trick is coming!

Rubber bands

The asparagus were not alone in the pan. They were surrounded by rubber bands.

The asparagus are immersed in water and held by 2 large rubber bands.

In fact, it's a very effective technique to take them out of boiling water without breaking them , says Laurence, my mother-in-law.

Just gently remove them from the water by slipping a fork under each rubber band.

Yep, that's silly. This trick makes it easier to remove them outside the container without breaking them.

Then we cut the rubber bands with a pair of scissors.

Surely you know better than me...

These plants, from the Asparagaceae family (yes, I had to place it, that one) are very fragile after cooking.

Of course, this little trick works just as well for green, purple or white asparagus.

I don't see how the color would change anything else!

They were delicious, those asparagus. And the sweet and light emulsion mayonnaise sauce that my father-in-law had prepared was just as good.

Bonus tip

If you don't want to cook the asparagus with their rubber bands, use the stainless steel steamer basket designed for pressure cookers.

Just dip it in the pan and put your asparagus in it.

Just be careful not to burn your fingers when you take out the basket!
