1. Tomato sauce

When you have too many tomatoes, making tomato sauce with tomatoes that are a little too soft to be eaten raw is ideal. It even works with cherry tomatoes!

2. Tomato soup

Do you like tomato soup? If so, you're in luck! Your mature, even overripe, tomatoes are perfect for making soup. For that, you can use this recipe here.

3. Dried or dehydrated tomatoes

If you have a surplus of tomatoes, put the ripe tomatoes in your food dehydrator.

Sun-dried tomatoes are always great in salads and homemade pizzas.

If you don't have a dehydrator at home, I recommend this one which is affordable and has good reviews.

It's an investment, but one that will pay off well, as you can use it for all vegetables and fruits.

And if you don't want to buy one, use your oven to dry tomatoes. You will be happy to eat it in winter!

4. Grilled Provençal Tomatoes

Here's a great recipe for not wasting overripe tomatoes, and it keeps for months!

Cut the tomatoes in half, then place them with garlic cloves on a baking tray lined with baking paper.

Drizzle a little olive oil over the tomatoes and add any herbs and seasonings you like. Bake them in the oven for about 20 min at th.7/8 (210°C).

You can eat them right away. Or, let them cool then put them in a jar.

Cover them with olive oil. Store in the refrigerator, then use them as you wish:in a salad, on a slice of bread with goat cheese, as a garnish with meat...

5. Chilli sauce

Do you have a lot of tomatoes and you don't know what to do with them? Preparing a sauce is always a good idea to use overripe tomatoes. So why not make chili sauce?

Cut your tomatoes into a pan. Add some peppers or chillies if you want. Add 2 tablespoons of vinegar and 50 g of brown sugar.

Reduce to medium heat. Once the tomatoes have reduced, you can blend them if you want a creamy sauce. Leave to cool and put in airtight jars.

So you can take out a jar in the middle of winter to make a good chili con carne for your friends.

Bonus tip

At the end of the season, save one tomato of each variety to get the seeds for the following year.

You'll save a lot of money, because you won't have to buy your seeds or plants anymore;-)
