When I was little, I don't think I ever ate cabbage- flower.

Seriously.

No cauliflower has ever crossed the door of our house...

Fortunately, things have changed a lot since then!

I have discovered all the ways to cook it and today I am sharing with you my favorite.

This roasted cauliflower recipe is perfect for dinner with family or friends.

Today, cauliflower is a regular vegetable in my fridge.

So I needed new ways to prepare it so that my plate escapes the routine.

Luckily, there are plenty of creative ways to cook cauliflower.

And this oven roasted cauliflower recipe is for me the best!

I'm not the only one who thinks so, as my 3 year old wolfed down half of this dish last night!

Ingredients for 1 roasted cauliflower

- a head of cauliflower

- olive oil or avocado oil

- butter

- chopped parsley

- a dish that goes in the oven

- baking paper

How to

1. Preheat your oven to 200°C.

2. Cut off the root of the cauliflower.

3. Remove tough leaves and stems, but do not break the cauliflower.

4. Pass it quickly under water.

5. Heat a large pot of salted water.

6. Add the cauliflower.

7. Cook it for 6 minutes after it resumes boiling.

8. Take out the cauliflower with a slotted spoon.

9. Place it upside down in a colander and let it drain for 10 min.

10. Put it in the gratin dish.

11. Generously drizzle olive oil over the top of the cauliflower. This is the key to perfectly roasted cauliflower.

12. Then add salt (and pepper if you want).

13. Using your hands, spread the olive oil and salt evenly over the entire surface of the cauliflower.

14. Put the cauliflower in a baking dish and cover it with foil or baking paper, making sure not to leave any holes.

I prefer to cook with a cast iron pan like this. But if you don't have one, any oven-proof dish will do.

Note, however, that using a cast iron pan is an interesting non-toxic option. It avoids introducing iron particles into the diet, which is not so bad;-)

15. Cook your cauliflower for 40 to 50 minutes depending on its size.

16. To know if it is cooked, check with a knife. If the knife goes in easily without resistance, it's good.

17. Remove the foil and roast the cauliflower for 5-10 minutes to brown slightly.

Keep an eye on it so it doesn't burn, as the cast iron pan continues to give off heat even when the fire is out.

18. Melt three tablespoons of butter. Mix it with the parsley.

19. Pour the mixture over the cauliflower while it is still hot.

Once cut, you may need to salt it again.

A friend also told me that she cooked the cauliflower in a pressure cooker and then in the oven for a few minutes to brown it.

Bonus tip

With this recipe, the cauliflower remains very crunchy.

If you like to eat very tender cauliflower, use the pressure cooker technique or cut it into several pieces before putting it in the oven.

You can also replace the aluminum foil with parchment paper.
