Ingredients

- 1 head of garlic

- 1/2 liter of liquid full cream

- 4 eggs

- tomato sauce

- basil leaf

- knob of butter

- salt, pepper

- 4 ramekins

How to

Preparation: 25 mins - Cooking: 40 mins - For 4 people

1. Separate the garlic cloves and soak them for 10 minutes in lukewarm water.

2. Drain the pods, peel them and remove the germ.

3. Cut the pods in half.

4. Pour the cream into the pan and add the garlic.

5. Bring to a boil and simmer for 10 minutes.

6. Then mix everything with an immersion blender.

7. Crack the eggs and beat them into an omelet.

8. Add them to the garlic cream and stir.

9. Season with salt and pepper.

10. Butter the ramekins and pour the preparation into the ramekins.

11. Bake in a bain-marie in the oven at 180° for 40 min.

12. Before the end of cooking, wash the basil and reheat the tomato sauce.

13. Turn out each flan on a plate.

14. Pour the tomato sauce around and decorate with the basil.
