Ingredients

- tops of a bunch of radishes

- 1 garlic clove, degermed

- 3 tablespoons hazelnut powder

- 5 or 6 tablespoons of olive oil

- salt, pepper

- food processor/chopper

- glass jar

- flexible spatula

How to

Preparation: 5 mins - For 4 people

1. Wash the radish tops.

2. Put the radish tops, hazelnut powder, salt and pepper in the blender.

3. Start the mixer for about ten seconds at high speed (but not at full speed).

Note: if you have a thermomix, put it on speed 6.

4. Then swirl more gently, adding the olive oil.

5. Scrape the edges of the blender with the spatula, and restart the blender for a few turns to mix well.

6. Stop the blender and transfer the pesto to the glass jar.

Store the homemade pesto in the fridge in the airtight glass jar.

Preservation is easy, in fact the pesto will not move for several weeks.

Variants

Instead of hazelnut powder, you can put almonds or even pine nuts.

Or simply mix several of these aromas.

For a pesto alla genovese, add pine nuts and parmesan to the blender.

The recipe can also be made with nettles, arugula or wild garlic.
