We all tend to eat the fruit and throw away the core.

However, these kernels can be much more useful than you think.

And since I hate throwing away or spoiling things that can still be used, I became interested in the pits of this summer fruit.

1. Weight a pie

When you make a fruit pie, these fruits can make a lot of juice.

Then the dough has difficulty cooking and remains moist.

So the trick is to pre-bake the dough in the oven.

But, sometimes it swells and you can't put the fruits down properly afterwards.

To remedy this, place a handful of apricot kernels on your pie shell before putting it in the oven.

As soon as the dough begins to brown, remove the pits and arrange your fruit.

2. Prepare an eau-de-vie

Did you know that you can prepare a delicious eau-de-vie just with apricot kernels?

In a saucepan, put 500 ml of water and 300 g of brown sugar.

Melt everything over low heat to obtain a syrup.

Once ready, pour the syrup into a jar or bottle with a neck wide enough for the pits to pass.

Add 60 apricot kernels and 500 ml of white alcohol at 60 or 90 volumes.

Close the jar tightly and leave to macerate for about 30 days away from temperature variations and light.

Then filter the alcohol and it's ready! The older the alcohol, the better it will be!

3. Flavor the jam

Our grandmothers prepared apricot jams by putting pits to give them flavor.

This is the secret of a good apricot jam!

To do this, break 4 kernels with a hammer so as to recover only the almond inside.

Be careful not to crush or break it, it would become toxic.

Prepare your jam as usual, adding the 4 almonds when cooking.

Once cooked, you can remove or leave the almonds in the jam.

On the other hand, you will be careful not to eat them.

You will enjoy a jam with amplified tastes.

4. Aerate the soil

Sometimes clay pebbles are placed at the bottom of flower pots to aerate the soil and drain it.

But, obviously buying these balls for the garden is not free...

Well, know that you can replace them with apricot pits (and even peaches).

Just let them dry in the sun for a few weeks before putting them in the bottom flower box.

Why dry them? Because it will prevent them from sprouting.

5. Grow an apricot tree

And why not return the core to its original purpose:to give birth to a new fruit tree?

Nothing could be simpler, place a few apricot kernels in a little potting soil, cover them with soil, and let nature take its course.

After a few months, you will see a small sprout emerge.

When it has 3 or 4 well-formed leaves, put it in a bigger pot.

For my part, I put all my fruit pits (apricot, peach, nectarine) in the same earthen pot and I forget about them.

The following spring, I am delighted to discover lots of little shoots.

Of course, some shoots do not develop.

On average, I manage to keep 2 to 4 a year and make them grow well.

Today I have a wide variety of potted fruit trees on my patio.

And I also give my friends saplings to plant in their gardens.

You will harvest your first fruits between 5 and 7 years later. But I promise you it's worth the patience!
