Inexpensive eggplant domelet recipe.

The advantage of this recipe is that it takes you off the beaten track of potato omelettes or bacon omelettes that everyone knows by heart.

So let's change color a bit. Here's how:Prepare the side dish first. Pass by the market for tomatoes, onions and aubergines.

Cut a large tomato into thin slices or chunks and throw them in a large pot of boiling water.

Make strips with the onion and send them in the water with the tomatoes. Do the same with the eggplant.

Salt and pepper. For those who like you can add cumin powder or other spices.

Now cook for 15 minutes then remove the lid and increase the flame of your fire so that the water evaporates. Then add the aromatic herbs and the beaten eggs.

Now all you have to do is start your omelette as usual.
