Our easy and inexpensive salad recipe, ideal for the lunch break.

The niçoise salad is a perfect change from the eternal midday sandwich. To prepare this easy and very affordable recipe, it's here.

This is a salad that I particularly like because it is very easy to make and the ingredients are really cheap.

For 1 salad here are the ingredients:

>> 70g of rice

>> 1 can of natural tuna

>> 1 half a tomato

>> 4 strips of bell pepper

>> 1/4 cucumber

>> 1 hard-boiled egg

>> Pitted black olives

The ideal is to prepare this salad the day before if you want to save time. And made in advance, it will only be better.

1. Cook the rice, drain and set aside to cool.

2. Make a hard-boiled egg

3. Cut the tomato, the seeded pepper and the cucumber into cubes.

4. Combine rice, vegetables and tuna in a tupperware. Add the black olives and refrigerate for the next day.

For the seasoning, our chef advises you to mix olive oil with a teaspoon of mayonnaise and chives. Salt, pepper and you're done. If you can do with homemade mayonnaise it's even better.

For a lighter seasoning and to keep the line, you can also prepare a very simple vinaigrette with olive oil, chives, vinegar or even better, with lemon. And of course we do not forget the salt and pepper to give taste. And that's it, enjoy it and let us know what you think in the comments.

Savings Achieved

The dishes and the cold sandwiches and the ready-made paninis, we saturate very quickly and then 3 to 4€ per day for a single meal, that's still a hell of an expense especially for those who have no restaurant ticket. At least with very simple dishes like this Niçoise salad, you make good savings. The dish costs less than 2€, and above all it will not leave you hungry.

So as not to eat the same thing all the time, you can also vary the flavors by using diced chicken, salmon instead of tuna... From time to time I have added green salad such as arugula or chew to give a little more lightness to the recipe. Just thinking about it makes my mouth water :-).
