My Five Cheap Salad Recipes!

Combining starches and raw vegetables, these recipes should give you ideas for light salads and economical, which allow balanced and delicious meals!

The sun is timidly reappearing, and with it, the desire for salads of all kinds.

At home, or especially for lunch at the office, I love to make fresh and original salads.

The five recipes that follow have the additional advantage of being really economical since they are all based on products that we tend to have leftovers.

Whether you cooked pasta, rice or lentils the day before, you can make delicious salads!

I give you the recipes for one person, in the idea that it is for a meal at work, but you can of course adapt them according to your needs!

1. Lentil and sausage salad

Mix the cooked lentils with half a shallot and a Strasbourg sausage. Season and serve very chilled.

2. Tuna rice salad

Add half a can of natural tuna to your rice. Dice a tomato and mix with the rice and tuna. Season with a light vinaigrette and add a few black olives.

3. Corn and surimi salad

Cut three sticks of surimi from a can of corn. Add the flesh of a diced avocado. Season with salt and pepper and serve chilled.

4. Tomato, mozzarella and raw ham salad

Dice two tomatoes. Add a slice of cured ham in strips and diced mozzarella. Drizzle with olive oil and balsamic vinegar. Salt, pepper.

5. Potato and ham salad

Cut two steamed potatoes into rounds. Add strips of cooked ham, three gherkins cut into small pieces and a very mustard vinaigrette.

In the cafeteria at the foot of my office, all the large plates of salad are sold between 6 and 9.50 euros… An aberration when you see the price of the basic ingredients!

These easy recipes won't cost you more than 2 euros, especially if you use seasonal vegetables (and you should even have some left over for an extra meal!) and what's more, these homemade salads have the advantage of not being bathed in the vinaigrette sauce too greasy!
