My 3 Homemade Vinegar Recipes to Vary the Flavors.

My 3 Homemade Vinegar Recipes to Vary the Flavors.

1. Raspberry Vinegar

Ideal with a warm goat cheese salad with honey or to deglaze my cooked duck breasts. I fill a 1 liter jar with about 300 grams of very ripe raspberries. I pour some warm white vinegar or cider vinegar over it, then mash the raspberries with a fork. I add a tablespoon of powdered sugar and add more vinegar to fill the jar. Finally, I let macerate for about 15 days and I filter.

2. Walnut Vinegar

Perfect for my summer salads. In a jar, I place a dozen fresh walnuts cut into quarters with thyme, bay leaf and a little Espelette pepper, then I pour cider or white wine vinegar. I let macerate for 3 to 4 months and I filter.

My idea for vinaigrette based on walnut vinegar:2 tablespoons of walnut vinegar, 3 tablespoons of walnut oil, 1 tablespoon of mustard, salt, pepper, leave to stand.

3. Vinegar with Shallots

It flavors oysters very well. In 1 dl of white wine vinegar, I put 100 grams of chopped shallots, I add salt, pepper, and let macerate for 2-3 months.

For the walnut vinegar:1 liter of walnut vinegar costs around €3.65 in the shops.

I buy around €1.30 a liter of wine vinegar.

I trust you to have the nuts, thyme and bay leaf for free (in your garden or that of a neighbor or family member).

The saving made is therefore €2.35 per litre.

If you consume like me about 3 liters a year, you therefore realize a saving of 7€05. Personally, these 7€05 allow me to buy the oil, it's perfect! :)
