Mouclade Charentaise:An Easy and Economical Mussels Recipe!

This mussel-based recipe is from Saintongeaise.

Very popular on the Atlantic coasts, this variant of marinière mussels is, once tasted, definitively adopted for its tasty taste and its low cost.

Very easy to cook, it is imperative to discover!

Ingredients for 4 Person

Mouclade Charentaise:An Easy and Economical Mussels Recipe!

- 2 liters of mussels

- 2 egg yolks

- 10 cl of fresh cream

- 2 glass of dry white wine

- 2 onions

- 2 tablespoons curry powder

- 30 g of butter

Preparation:20 min - Cooking:10 min

1. I clean my molds with a knife and rinse them under cold water (I regularly find them at the supermarket already cleaned and therefore ready to use).

2. I peel and finely chop my onions.

3. Over high heat, I pour my wine and my mussels into a Dutch oven.

4. As soon as they open (after 5 to 6 minutes), I remove them from the heat and place them in a gratin dish, keeping only the shellfish containing flesh.

5. Using a fine strainer, I filter my cooking juices which I reserve in a salad bowl.

6. In a saucepan, I brown my chopped onion with my butter for 5 minutes then I add the cooking juices from my mussels. I mix and let reduce by half over low heat.

8. In a bowl, I separate my egg whites from the yolks, add my cream and curry and mix.

9. I leave to heat over low heat without boiling and pour my sauce over my mussels so as to coat them well with my preparation.

10. I leave to brown in the oven (preheated to 210° beforehand) for 3 to 4 minutes

You can also replace the curry in this recipe with saffron which is more delicate in flavor than curry.

- 2 onions:around 250 g at €1.85 per kilo, i.e. €0.46

- 2 tablespoons of curry powder:i.e. 10 g at €16 per kilo or €0.16

Either a seafood dish with original flavors costing me €2.40 per person or at €9.63 for 4 guests.
