For our holiday meals, we tend not to shy away from quantities.

But our stomachs don't cry out for food after a feast.

Also, for my post-holiday meals, I rely on leftovers!

Santa Claus has just placed the presents under the tree, and I already have to think about the New Year's festivities...

But what am I going to do with the leftovers from New Year's Eve that invade my fridge?

No throwing away every crumb in the trash! Also, I use tricks and innovate…

1. I freeze

My guests enjoyed my homemade salmon terrine only here, I cooked a whole regiment of it.

Do not panic, if Jules and the children do not seem very cheerful for a new tasting, I put it in the fridge for 3 months, go to the freezer!

I would always have the opportunity to serve it in case of an unexpected dinner…

2. I'm cunning by reusing for another recipe

I have some turkey left over and I admit that I've been eating it since my Christmas Eve.

I innovate by cooking a delicious turkey parmentier. I replace my beef with my poultry cut into small pieces and I treat the whole household!

And since I don't throw anything away, I keep my poultry carcass to make a broth:

- I put it in a large pot of water.

- I add some carrots and potatoes, peeled and cut into pieces, a leek and a turnip.

- I cook for about 30 min over medium heat as soon as my water starts to boil.

- I remove my poultry carcass and mix my vegetables.

- I serve my broth very hot.

There's nothing like getting back in shape after meals that are a little too rich!

3. I innovate… with savory croissants or mini-pizzas

My appetizers caused a sensation as an aperitif. My trays of puff pastries were emptied in record time.

I should have planned more given all the scraps of dough I have left!

I then start preparing small savory croissants and mini pizzas that I garnish with my leftover meat and vegetables.

And to better work my dough, I place it in the fridge for a few moments so that it is not too soft.

By freezing my leftovers, cunningly not throwing anything away and innovating with new recipes, my post-holiday leftovers have a second life.
