Why does it work?

Yeast is a living ingredient:it's a fungus. It means that it changes and evolves.

Thus, heat and contact with humidity activate the yeast.

This is why the dough rises well when you put it near a source of gentle heat.

It produces CO2 which remains trapped in the dough (because of the gluten). It is this chemical phenomenon that causes the dough to swell.

The ideal temperature for the dough to rise well is between 25°C and 30°C maximum.

Note that the temperature should never exceed 50°C.
