Bounty bites

With these bounty bites Carolina van Dorenmalen shows that snacking doesn't have to be so unhealthy. All recipes in her book 'Tasty healthy' have no or a positive effect on:weight (gain), bloated stomach, metabolism, blood sugar level and skin condition.

Food processor • baking tin 15 x 15 cm • baking paper

Ingredients

150 g grated coconut + extra for garnish 

2 tbsp coconut oil, melted

2 tbsp agave syrup

½ tsp vanilla extract pinch of salt

100 g dark chocolate (min. 80% cocoa)

Preparation

Heat a large frying pan and roast the grated coconut while stirring in light beige for about 5 minutes. Let cool on a plate. Place the coconut, coconut oil, agave syrup, vanilla extract and salt in a food processor and blend briefly. Line the baking pan with baking paper. Spoon in the coconut mixture, smooth and place in the freezer for about 4 hours. Melt the chocolate in a bain-marie. Line a baking tray with baking paper or place the baking paper on your counter. Cut the coconut into 9 large bites and dip them halfway into the melted chocolate using a cocktail stick or by hand. Put them on the paper. Sprinkle half of the chocolate with the extra grated coconut. Store the bites in an airtight container in the refrigerator.
