Recipe:salmon tartare, wasabi and a Parisian Waffle crumble

A combination that you would not easily think of:biscuits with fish. Nothing is too crazy for the Flemish chef Andy Verdonck. Read on for his recipe

To arrive at a tasty recipe, Andy has tried, tasted and let others taste the Parisian waffles from Jules Destrooper with different ingredients. The end result is a tasty and surprising combination.

Ingredients
for 6 people
– 100g Parisian Waffles
– 100g smoked salmon
– wasabi puree the size of a chickpea
– juice of half a lime
– 1 can of black olives in juice without pit, with a drained weight
of 170g
– salt and pepper

This is how you make it Start with the black olive powder. Place pitted olives on an oven tray. Let them dry in the oven at 80 degrees for 6 hours. Let the olives cool down and grind them into a powder in the blender.

Cut the smoked salmon into fine strips and mix with the lime juice, puree of wasabi, pepper and salt.

Then make a crumble of the Parisian waffle and mix it with some olive powder. Place the salmon tartare in a glass and sprinkle with the crumble.

Be careful with the herbs:lime increases the salt content and the wasabi is also quite strong for many people.
