Use sharp knives in the kitchen

A sharp knife prevents accidents.

A good knife glides through the product. If you use a dull knife, you have to use more force. You shoot faster as a result, making an accident happen faster. In addition, there is another 'advantage' of a sharp knife:if you do cut yourself, a wound from a sharp knife heals faster.

Be warned This warning is issued by Het Koksgilde, a professional association for food professionals. 12,000 industrial accidents occur every year in catering kitchens, half of which are cutting incidents. It is not known how many people cut themselves at home, but the number is probably higher.

A sharp knife is also an advantage for eating
A dull blade tears and bruises the product you are cutting. The structure is damaged, causing juices to be lost. This is at the expense of taste, shelf life and quality.
