Recipe for chicken breast strips with potatoes, green beans and wild mushroom pesto

HelloFresh: 'The chicken fillet strips that you will bake in this recipe were seasoned for you by our butcher with herbs such as oregano, parsley and paprika. These flavors go well with the crispy green beans and the baby potatoes. The mushroom pesto is a special product with which you can make this dish that little bit different.'

Ingredients per person

  • 250 grams of baby potatoes
  • 100 grams of seasoned chicken breast strips (see above which herbs HelloFresh uses)
  • Half tablespoon olive oil
  • 200 grams of green beans
  • 40 grams of wild mushroom pesto
  • Half teaspoon black balsamic vinegar
  • Pepper and salt to taste

Get started

  1. Boil 300 ml of water per person in a pan with a lid for the potatoes. Cut large potatoes into quarters and small potatoes in half and cook for 12 – 15 minutes in the pan with a lid.
  2. In the meantime, remove the stem ends of the green beans and cut the beans into 2 equal pieces. After 5 minutes, add the green beans to the pan with the lid and bring to the boil. Then drain and let it steam out without the lid.
  3. In the meantime, heat the olive oil in a wok or frying pan and fry the seasoned chicken fillet strips over medium heat for 5 minutes until golden brown.
  4. Mix the baby potatoes, green beans and seasoned chicken breast strips in a salad bowl. Add the wild mushroom pesto and black balsamic vinegar and season with salt and pepper if desired. Divide the dish between the plates.
