Recipe:King s Day cocktail from Estée Strooker

Cheers to King's Day with this King's Day cocktail from Estée Strooker!

Estée:'Herbs have always fascinated me as a cook. My trip to India inspired me to experiment with the herbs brought to Europe by the Dutch. Turmeric in particular attracted me right away, because of its rich color and subtle, woody scent. I combined them with other, more well-known spices such as nutmeg, pepper and cloves'

Ingredients King Syrup

To mix through the cocktail in the next step.

  • 250 gr sugar
  • 150 ml of water
  • 1 tsp pink pepper berries (broken)
  • ½ tsp turmeric
  • 5 cloves
  • 1 orange
  • 8 sprigs of lemon thyme
  • 2 bottles of cava

Preparation king syrup

Peel the orange and place the peels in the pan. Add the sugar to the orange peels and rub the sugar into the peels with your hands for about 5 minutes. You will see that the sugar discolors and starts to clump. Then add the pink pepper berries, turmeric and cloves to the orange sugar and stir with a spoon. Then put the pan on low heat and add the water. Let the sugar melt into a syrup while continuing to stir without letting the mixture boil. When the sugar has melted, turn off the heat and let it rest and cool for about 10 minutes. Then strain the syrup and store it in a bottle or container.
