Recipe for coleslaw with samphire

We make this standard Dutch coleslaw with cabbage, apple and raisins extra tasty with a salty twist of fresh samphire. A delicious, refreshing and above all protein-rich salad.

Ingredients for coleslaw with samphire

  • 1 small pointed cabbage, finely chopped
  • 100 grams of samphire
  • 1 carrot, grated
  • 2 stalks spring onions, in rings
  • 1 apple, diced
  • 30 grams of raisins
  • 50 grams of walnuts, toasted
  • 3 tbsp vegetable mayonnaise
  • 3 tbsp lemon juice
  • salt and pepper

Preparation method

1. Steam the samphire for about three minutes.

2. Mix the mayonnaise with the lemon juice in a large bowl. Add the remaining ingredients and toss.

3. It is best if you let the coleslaw stand for a while, so that all the flavors can be absorbed.
