Recipe for aubergine boats with Pulled Oats

You may have already seen them at Albert Heijn:Pulled Oats from Gold &Green. A meat substitute and complete protein source. But what do you do with it? How about these aubergine boats.

Ingredients for aubergine boats

  • 1 pack of Pulled Oats® Tomato
  • 2 aubergines
  • 200 g fresh spinach
  • 2 garlic cloves
  • 2 mozzarella balls, 125 g each
  • 250 g cherry tomatoes
  • Fresh basil
  • Salt
  • Black pepper
  • Oil

How to prepare aubergine boats

1. Preheat the oven to 200°C.
2. Wash the aubergines and cut them lengthwise into slices about a centimeter thick.
3. Brush both sides of the aubergine slices with oil and season with salt and pepper. Bake them in the oven for 15 minutes.
4. Fry the spinach together with garlic in a pan with oil. Add the Pulled Oats and cook for 1-2 minutes. Slice the cherry tomatoes and mozzarella. Remove the aubergine slices from the oven and place the toppings on top. Bake for 10-15 minutes or until soft.
5. Garnish the aubergines with basil, salt and a pinch of black pepper.
