The October issue of Santé featured a tasty photo of the big editorial favorite:a banana fudge cake. We hadn't taken into account that everyone wanted to know the recipe. So with this one!

It was just a photo with the approach 'If there is one thing you have to try this month:a sweet, sticky and fluffy banana toffee cake… Also known as banoffee cake. We also posted it on our Instagram.

We knew it, because the editorial email and also the reactions on Instagram poured in:'Where is the recipe?!'

We didn't expect that. Stupid, because of course you want to know what the recipe is when you see the photo. To be fair:we don't make it ourselves, but buy a delicious version at a coffee shop around the corner...

But because of your enthusiasm we were also infected with the homemade virus! So we went looking for the best version.

Two variants of banana toffee cake

But how many variants there are! We've highlighted a few:

The extended variant with Maltesers of the AH

You need this:

  • 115 g salted pecans
  • 50 g granulated sugar
  • 4 sheets of gelatin
  • 250 ml fresh whipped cream
  • 24 g vanilla sugar
  • 125 g crème frache
  • 5 bananas (ripe)
  • 50 ml of water
  • 2 espresso sticks
  • 1 marble cake
  • 395 g condensed whole milk (can)
  • 600g Maltesers
  • 1 tbsp icing sugar

Also:baking paper, food processor and a 30 cm cake tin.

The simple version of Koopmans

You need this:

  • 240 g Koopmans Fine Cake
  • 3 eggs
  • 225 g sunflower oil
  • 1 tsp cinnamon powder
  • 400 g bananas cut into pieces

For the caramel:

  • 200 g sugar
  • 70 ml of water
  • 120 g butter cut into cubes
  • 250 mascarpone

For the garnish:

  • 300 ml whipped cream
  • 1 sliced ​​banana
  • Dark chocolate shaved

Also:mix with a whisk, baking spray (or flour for dusting) and a 30 cm cake tin
