Ingredients

  Soil

  • 80 g butter
  • 1.5 dl wheat flour
  • 1.5 dl grated cheese
  • 30 ml cold water

Filling

  • 1 pack of Pulled Oats® Tomato
  • 1 small onion
  • 1 garlic clove
  • 80 g fresh baby spinach
  • 2/3 dl sun-dried tomatoes
  • Fresh basil
  • Oil for frying
  • 2 small eggs
  • 1.5 dl mascarpone
  • 1.5 dl grated mozzarella
  • Salt
  • Black pepper

Preparation method

  1. Preheat the oven to 200 °C.
  2. Mix the softened butter, grated cheese, water and wheat flour. Press the bottom into a cake tin (24 cm diameter). The dough may curl over the edges. Bake for 10-15 minutes.
  3. Fry the finely chopped garlic and onion in a pan with some oil, until the onion is translucent. Add the spinach and cook until the excess moisture has evaporated. Spread over the pie crust and sprinkle with sun-dried tomatoes, Pulled Oats and basil.
  4. In a bowl, beat the eggs, mascarpone, grated cheese, salt and pepper. Pour the mixture into the cake tin. Bake for 30 minutes, or until center is completely set. Let the quiche cool for 5-10 minutes before slicing.
  5. Serve with a fresh salad.
