Recipe from The blender book:avocado lime mousse

In The blender book by Nora French you will find the tastiest dishes that you can make with the blender, including desserts. Like this avocado-lime mousse!

What makes this dessert special is the fresh taste of the mousse with the crunchy bite of the crumble. The mousse has a nice creamy structure due to the avocado and coconut oil. The lime and maple syrup in this recipe from the book The blender book provide a nice sweet-sour taste balance.

Taste to see if you find the mousse sweet and sour enough, add extra maple syrup or lime zest if necessary. Spoon the mousse into the glasses and put in the fridge for at least 4 hours.

Preheat the oven to 160 degrees and line a baking tray with baking paper. Roughly chop the pecans, mix in a bowl with the grated coconut and honey.
