1. Greek 'cucumber noodle' salad

Ingredients :olive oil, lemon juice, garlic, mint leaves, Greek yogurt, sea salt, black pepper, cucumber, pine nuts

Creamy salads usually contain a lot of mayonnaise, but luckily that's not the case here. Instead, you'll need low-fat Greek yogurt for this recipe, which will give you an instant protein boost while cutting back on calories and fat. In comparison, 115 grams of mayonnaise contains 800 calories, while 115 grams of low-fat Greek yogurt have only 85 calories. By adding olive oil, lemon juice, garlic, salt and pepper, the yogurt gets a delicious taste, which makes it perfect for combining with the crispy cucumber noodles.

Instead of the creamy Caesar dressing, we opted for a DIY dressing with hummus, green tea, Parmesan cheese, garlic, vinegar, soy sauce, salt and pepper – a special, but delicious combination. We also replace the carbohydrates of the croutons for a healthier version, namely with sunflower seeds. The base? Kale and tomatoes, which means that this also contains more nutrients than the original Romaine lettuce. Sounds good, right?

4. Grilled vegetable quinoa salad

Ingredients :quinoa, white balsamic vinegar, sea salt, grilled vegetables, coriander, parsley

This hearty salad will outshine all other summer salads without a doubt. Pairing quinoa with grilled vegetables makes this a rich and hearty salad while still being relatively low in calories. The best thing about this salad? You can make it in advance! In addition, this salad is vegan, gluten-free and you get enough grain and vegetables. You can of course also make variations if you feel the need, for example by replacing the quinoa with brown rice.
