Blue zone recipe:cornmeal waffles

These wafers from blue zone Loma Linda (California) are fantastic in taste and texture, but absolutely not difficult to make. In addition, thanks to the wheat flour, nuts and fresh fruit, they are a nutritious breakfast or a special evening meal.

In five places in the world the inhabitants are on average a lot older than in the rest of the world. This would be due to the super healthy eating habits of the residents of these beautiful places, also known as Blue Zones.

Recipe

This blue zone Loma Linda, California cornmeal waffles recipe is a real treat:

For 4 people (8 waffles)
Preparation time:15 minutes

For the batter:

  • 125 g wholemeal flour or flour, or a combination of both
  • 80 g corn flour
  • 1/2 tsp baking soda
  • 1⁄8 tsp salt
  • 2 tbsp granulated sugar
  • 2 tbsp oil
  • 60 g applesauce
  • 300 ml almond milk
  • 2 tbsp chopped, roasted greens
  • Chili peppers (optional)

To garnish (your choice):

  • cashew room*
  • maple syrup with 1⁄8 tsp salt
  • blackberries
  • granola

*For the cashew cream:

Soak 150 g of cashew nuts in hot water for at least 3 hours or overnight. Then mix the drained nuts with 120 ml water in a blender or food processor on high speed until a very smooth cream. If you find the cream too thick, add a little more water.

Preparation:

  • In a large bowl, mix the whole wheat and corn flour, baking soda, salt and granulated sugar together.
  • Add the remaining ingredients and mix everything well again.
  • Heat a waffle iron and grease it with cooking spray. Bake the waffles for 3-4 minutes.
  • Serve them immediately with a garnish of your choice.
