What is umami?
Umami is a taste that is difficult to explain. In Japanese it means "delicacy" or "savory". Umami In addition to sweet, sour, salty and bitter, it is also called the fifth taste. It's the flavor that makes fried bacon so appealing. Other umami-rich products are tomatoes, Parmesan cheese, soy sauce and various mushrooms.

Less appetite
The taste arises because our tongue recognizes glutamates. That gives the food a nice taste and when it is combined with proteins, it provides a satiety feeling.

Breakfast
For the study, a group was given a breakfast rich in foods rich in umami , the other group ate a breakfast without. The group whose breakfast was rich in umami ate less the rest of the day.
