Gambas al ajillo with tomatoes

Here at home we love gambas al ajillo (gambas in garlic oil). Luc and Lotte eat their fingers at this. Alle Frank is not a fan of fish and shellfish, so he doesn't eat with us. Even though he always thinks the garlic oil smells really nice. haha. Since many people do like the gambas al ajillo, I'll give you our recipe here. Delicious as a side dish or just in the evening with a drink!

Recipe stir-fry gambas al ajillo with tomatoes!

The following is enough for 2 people, but it depends on how tasty you like it. If you are a real enthusiast then you might want to make a little more.

Ingredients for gambas al ajillo

  • pound of king prawns, medium
  • tomato (you can take regular tomatoes, but also tasty cherry tomatoes)
  • fresh parsley
  • teaspoon sambal
  • 3 large garlic cloves for the gambas al ajillo
  • olive oil
  • pepper
  • salt

Nice to serve with it:

  • Turkish bread
  • ai oil

You can make the aiolie yourself in the following way. Goes great with the gambas al ajillo! For the ai oil, mix all the ingredients below and you're done. Taste in between to test whether the quantities suit your taste.

  • olive mayonnaise (mix mayonnaise with olive oil yourself)
  • fresh parsley or Mediterranean herbs
  • lemon
  • garlic
  • salt&pepper

Make recipe gambas al ajillo

First marinate the prawns in fresh parsley (a lot!), garlic, olive oil and salt &pepper. The garlic, if you have a whole one, it's best to just cut it in half or just bruise it and place it between the prawns. Then the garlic will not burn when you fry them.

Put them in the wok (or other good pan) and fry them briefly together with tomatoes cut into small pieces or the cherry tomatoes. The gambas al ajillo should not be overcooked. Then they become tough and that is not good. They should turn a nice pink/red, then they are good.

This recipe is delicious with a fresh wine!
