caramelized carrot; tasty, healthy and simple

A delicious dish as sidedish with a nice piece of meat is caramelized carrot. It sounds a lot trickier than it actually is to prepare. Below you will find how - in no time - you can put these tasty carrots on the table.

Caramelised carrot as main vegetable or as sidedish

As mentioned, you can choose to use the carrots as a sidedish, together with, for example, red onion, but you can also simply serve them as the main vegetable with your food. In any case, our kids love them and if you serve them like I did here, it's also fun to present them when you get eaters.

Ingredients for 4 people

  • A bunch of carrots
  • 2 tablespoons honey
  • 1 piece of butter
  • Splash of balsamic vinegar
  • 2 dl vegetable stock

This is how you prepare the carrots in the pan

I prefer to prepare the caramelized carrot in the pan. Especially because the carrot remains nice and juicy this way. In any case, use a sauté pan with a lid so that the moisture remains in the pan and you can also steam the carrots until done.

Preparation method caramelized carrot:

  1. First cut the foliage from the carrot, leave 2 cm of foliage for a nice presentation. that bit of green looks really nice when serving.
  2. Grate the carrot cleanly. I do that myself with a peeler, it's super simple.
  3. Cut the carrot in half lengthwise.
  4. Put the butter in the sauté pan
  5. When the butter has melted, add the carrot and leave it in the butter for a while.
  6. Add the honey and balsamic vinegar.
  7. Gently stir the carrot through the pan so that all the carrot touches the honey and vinegar.
  8. Add the vegetable stock and put the lid on the pan. Lower the heat.
  9. Steam the carrot for about 20 minutes.
  10. Remove the lid from the pan and turn the heat up a bit.
  11. Make sure that all the moisture has now evaporated and gently stir the carrot. When the moisture evaporates, the rest will caramelize. Stay with it, because otherwise the carrot will burn, that would be a shame.
  12. After 5 minutes, the caramelized carrot is ready to serve.

Caramelized-carrots from the oven

You can also make caramelized carrots in the oven if you like. The disadvantage is that they are a bit drier than the carrots made using the above preparation method.

Serve deliciously with

You can combine the caramelized carrot with rice, potato wedges or, for example, celeriac puree. And a tasty ham or hash on the bone, for example, fits very well as meat, but many of my slow cooker recipes with meat fit perfectly.
