Pork tenderloin in slow cooker with red port sauce

The first time I make pork tenderloin in the slow cooker is an instant success. This time I made the pork tenderloin with red port sauce, but I will definitely experiment with other recipes as well. Because pork tenderloin in the slow cooker? That's really nice!

Next time I'll try to make a mushroom cream sauce instead of the red port sauce, for example, seems very tasty.

Ingredients pork tenderloin is slow cooker (4-5 people)

  • 3 pork tenderloins
  • 1 bunch spring onions
  • 4 cloves of garlic
  • 100 ml beef stock
  • 300 ml port (tawny)
  • 2 bay leaves
  • 4 sprigs of thyme

You can eventually put the thyme sprigs in the slow cooker straight away, you don't have to remove the thyme leaves, that saves time!

As I have indicated below, I first briefly browned the pork tenderloin before I put it in the slow cooker. This is not necessary, but we got eaters and I wanted a nice brown color on the outside of the medallions, hence.

These Brussels sprouts in the slow cooker are also very tasty by the way!

Preparation pork tenderloin in red port sauce in slow cooker

  • Cut the spring onions into small rings
  • Fry the pork tenderloins briefly (a minute or 2) and then cut nice even medallions from them
  • Put the spring onions in the slow cooker and squeeze the garlic over them
  • Place the pork tenderloin medallions in the slow cooker
  • Add the bay leaves in a tea egg
  • Add the stock and port
  • Place the thyme sprigs on top

Note: To start, the tenderloin really only needs about 4 hours on low in the slow cooker, much longer is not necessary. At least if you put pork tenderloin medallions in the slow cooker. You may need a little longer for a whole pork tenderloin.

The pork tenderloin is now delicious and ready to be eaten!

Making red port sauce, but even tastier

Do you want to make the red port sauce even tastier and thicken it a bit? Then it is best to perform the following before serving:

  • Remove all port sauce from the slow cooker
  • Sieve the sauce so that no onion leftovers are visible
  • Put the sauce in a pan
  • Mix a little cornflour with some cold water and thicken the sauce while stirring
  • Add a little more port to make the sauce redder again
  • Mix in a knob of (cream) butter. This makes the sauce even smoother.
  • Pour the sauce over the pork tenderloin medallions again in the slow cooker
  • Enjoy your meal!

Serving tip:Eat these pork tenderloin medallions with celeriac puree, super simple and very tasty. And don't forget to try our other recipe for pork tenderloin from the slow cooker:a meat dish the Eastern way.
