I love stuffed eggplant, but I don't make it very often. I often “forget” to use this vegetable as the main vegetable. Usually I cut it into pieces to put through something, but you can make fun and tasty recipes with it as a whole aubergine. After all, the eye also wants something! Yummy stuffed aubergine recipes that also look nice

Eggplant itself does not have a very strong taste, but it does have a tendency to take on the taste of the products you combine it with. In addition, the structure of the eggplant on the inside is somewhat meaty, so you can use this vegetable very well as a meat substitute. With the stuffed eggplant recipes below you will also see recipes with no meat. Something for everyone!

Serve these recipes, for example, with delicious red onion from the oven or mashed potatoes or celeriac puree and you have a healthy and delicious meal.

Vegetarian stuffed eggplant with tomato and mozzarella

This is my favorite recipe, that's why it's at the top! You do need to set aside some time for it. The preparation does not take a lot of time, but the stuffed eggplant does have to be in the oven for a while, that's why.

Ingredients:

  • 1 eggplant
  • 1 tomato
  • 1 piece of mozzarella
  • oil
  • coarse sea salt
  • pepper
  • fresh parsley

This is how you make this eggplant filled with tomato and mozzarella from the oven

  • Preheat the oven to 180°
  • Wash the aubergine and cut it lengthwise into long strips. Leave the crown on so that the aubergine stays together, that also serves well!
  • Preferably let it drain for another 30 minutes. Not necessary, but it is more convenient due to the amount of moisture
  • Slice the tomato and mozzarella
  • Rub the cut parts of the aubergine with coarse sea salt, then you can start filling
  • Put a slice of tomato and a slice of mozzarella between each slice of aubergine
  • Place the stuffed aubergine in a bowl, sprinkle with pepper, a dash of oil and fresh parsley
  • 50 minutes in the oven and it tastes delicious

Stuffed eggplant with minced meat from the oven

Another delicious recipe with stuffed aubergine and this time with minced meat from the oven. This eggplant takes a little less time in the oven, but the preparation of the filling takes a little longer than the stuffed eggplant recipe above. You cut this aubergine again to be able to fill it, but then in the width. To ensure that you do not cut all the way down to the bottom, but that the aubergines partly stick together at the bottom (before serving), use two ladles as shown in the photo below.

You'll need this for this oven-filled eggplant recipe:

  • 1 eggplant
  • 200 grams of minced meat
  • half a red bell pepper
  • half an onion
  • minced herbs
  • salt
  • little oil
  • little fresh chives

Preparing eggplant with minced meat from the oven

  • Preheat the oven to 160°
  • After cutting the aubergine, divide it into 3 pieces, as below. As you can see, the bottom is still attached.
  • Prepare the stuffing for the stuffed aubergine with minced meat as follows:mix the mincemeat, finely chopped bell pepper and onion together with the minced herbs and a little salt and the freshly chopped chives with a fork or with your hands.
  • Fill the openings of your aubergine. The easiest way to do this is with your hands. Then you can simply tuck in the minced meat and finish the stuffed aubergine up to the edge.
  • Sprinkle and pour over a little oil and pepper and the stuffed aubergine is ready to go in the oven.
  • 30 minutes in the preheated oven and you have a delicious stuffed aubergine on your plate.
