What to do with stale bread?

Excess as the only companion when shopping, so we buy excessively for fear of lack. Living in confinement is ok, but only on condition that the pantry is overflowing and that's how we find ourselves with extra bread. But bread has the virtue of being able to be cooked even stale. Proof by 5!

French toast with orange blossom and honey

What bread? Baguette or stale brioche bread. Recipe ? We beat 2 eggs, 2 tbsp. at s. of icing sugar, 25 cl of milk, 2 tbsp. c. honey, 1 tbsp. at s. orange blossom water and 2 tbsp. at s. of almond powder. Soak the bread well in this mixture. Brown in the pan, 5 min on each side. Place on a platter and sprinkle with toasted slivered almonds.

French toast with Comté cheese and cumin

What bread? Baguette, country bread. Recipe ? Slices of bread are dipped in 25 cl of milk, then in 4 beaten eggs with 125 g of grated Comté cheese and a pinch of powdered cumin. We reserve, covered. We heat the butter in a frying pan, we put the bread. We let it cook and brown gently on each side. Sprinkle with cumin seeds before serving hot.

Banana and milk pudding

What bread? Baguette, sandwich bread, country bread. Recipe ? Preheat the oven to 180°. 200 g of stale bread are soaked in 1/2 l of hot milk. Then we mix with 3 bananas cut into pieces, 100 g of sugar, 1 sachet of vanilla sugar, 60 g of ground almonds and 3 whole eggs. Pour the mixture into a buttered gratin dish and bake for 45 minutes. Serve warm or cold.

Bread gratin

What bread? Sliced ​​bread (countryside), possibly baguette. Recipe ? In a dish, place a layer of hard bread. On top of the slices of ham and another layer of bread. In a bowl, mix 3 eggs, 20 cl of milk, 1 small pot of fresh cream, salt and pepper. Pour the mixture over the bread which should soften well. Bake for 1 hour at 180°. We wait for the bread to absorb the juice. Sprinkle with grated Gruyère cheese and brown again for 10 minutes.

Panzanella (bread salad with tomato)

What bread? Poilane bread. Recipe? We soak 125 g of stale bread with fresh water to cut it into cubes. In the tureen, add 3 tbsp. at s. olive oil, 6 tomatoes and 1/2 cucumber (diced), 1 chopped red onion, olives and 1 tbsp. at s. pesto, salt, pepper. Mix and leave to marinate for 15 minutes. Before serving, add 1 tbsp. at s. of balsamic vinegar, mix, drip and adjust the seasoning.
