#gourmandcroquant:we're melting for Cyril Lignac's Eton Mess with strawberries and meringue!

GENERAL INFORMATION

Recipe for 4 people

INGREDIENTS

  • 2 large meringues or 4 to 6 small meringues
  • 20g vanilla icing sugar or vanilla sugar
  • 200g 35% full cream
  • 250g strawberries, quartered
  • 1 tbsp. icing sugar
  • 100g of strawberry purée

PREPARATION

  • In a bowl, gently mix the strawberries and icing sugar.
  • In a second very cold bowl, pour the cream and whip it with the vanilla icing sugar into whipped cream. Add the meringues broken by hand and ¾ of the strawberries. Mix very gently with a spatula.
  • Share in the glasses, top with the rest of the strawberries and the strawberry puree. If you have a little meringue left, crumble some.
