New:Chocolate makers are getting into vegetables!

"Chocolate goes best with savory"

The idea has been gaining ground since 2007 in the mind of Nicolas Cloiseau. The chef chocolatier, for the first time, combines vegetables and chocolate, during the Meilleur Ouvrier de France competition. La Maison du Chocolat launches a new series of 5 flavors in its "salty spirit" box.

We tested for you:chocolates with unexpected flavors!

We already knew the flavors of salted butter caramel, pistachios or fleur de sel. After the fruits, the flowers, the plants, we savor the chocolate with vegetables!

For the uninitiated and the skeptics, we taste the classic Guérande salt. Nothing exceptional at first! The taste of dark chocolate dominates, crunchy at first and then melting. The hints of Guérande salt offer a feeling of freshness, very pleasant in the mouth.

We gradually increase in flavors, with chocolate with red pepper. If the vegetable has spiciness, the chocolate did not overwhelm our senses! The taste of dark chocolate is very present, but the pepper... we are still looking for it!

Moving on to black olives, a creamy chocolate, topped off with a “crunchy-crunchy” praline. In general the olive divides rather than unites, but here we are surprised to say "I want more!". A nice surprise!

Chocolate with porcini mushrooms:thin and crispy. The small hazelnut taste of the porcini mushrooms associated with the praline reinforces the taste of the chocolate:a delight! It's innovative, it changes, far from the received ideas that we had of a chocolate mushroom!

Caramelized onions:undoubtedly the most… curious chocolate?! The milk chocolate fades very quickly and gives way to the simmered onion... An aroma that settles in and squats our palate! We used to use the onion to spice up our dishes, here we give it pole position:a surprising mix!

Chocolate with vegetables, either we love it or we hate it, but in any case for the gastronomic side the chocolate-vegetable alliance is a successful bet!
