The fabulous Bubble Tea recipe

This is THE drink that the trendy planet is snapping up! It has become almost commonplace in the streets of Berlin or London. You have surely seen a fashionista hanging out on social networks taking selfies, mouth in carp, with a funny colored drink and punctuated with black polka dots... Well it's Bubble Tea ! In France, this drink is only known by a handful of followers, but it is quite possible that it will become a summer essential. It's a great way to cool off and delight your friends during a short afternoon on the terrace. An original "bubble tea" full of possibilities that will make you smile and take you on a journey from your living room to Taiwan.

It is actually a flavored black or green tea in which we put “pearls” of different tastes. Very often, we add a little milk, syrup and/or yogurt and we suck it all up with large straws to let the "bubbles through. » … (yes I know, it makes you want to sit on a deckchair with your big glass and a magazine… It’s made for!)

These little bubbles are actually tapioca pearls. They are the real stars of this tea! They rise from the bottom of the glass to smack under your tongue and release their aromas:lemon, strawberry, mango, coconut, blueberries... Everyone has their own tastes!

Tea Time

Well, we've made you wait long enough:let's get to the heart of the matter

To make a Bubble Tea you need:

– Black tea:For a glass, infuse for 5 minutes, 1 teaspoon of black tea in 150ml of very hot water

Or green tea:infuse for 5 minutes, 2 teaspoons of green tea in 300ml of very hot water

– A sweet solution:very easy and essential for all preparations (milk and syrup)! Just heat some water and pour the same amount of sugar into it. For 100ml of water, 100g of sugar.

– Tapioca pearls:For a glass, count 30g of raw tapioca pearls to cook in 300ml of water. When boiling, pour in the tapioca pearls and cook for 12min for a firm pearl, 16min for a fondant or 20min for lovers of extra-melting pearls. Leave to stand for 5 minutes in the cooking water. Drain the tapioca pearls in a colander and run them under cold water. (advice:add 2 spoons of sugar solution to the container)

– A shaker to mix all your crazy combinations

– A colorful XXL straw to pass your tapioca pearls (and incidentally take a selfie that will make all your friends jealous!)

Option 1:Bubble Tea with flavored milk:for a glass you need 150ml of tea, 150ml of milk, 35g of flavored powder (found on Bubble Tea fan websites ), 30g of sugar solution, 50g of tapioca pearls and 5 ice cubes.

Option 2:Bubble Tea in syrup:for one glass you need 300ml of tea, 30ml of syrup, 30g of sugar solution, 50g of tapioca pearls and 5 ice cubes.

Little tip:do not hesitate to mix two kinds of syrups (2 x 15ml) with different flavors. In killer combinations, we recommend:Mango/Lemon, Lychee/Raspberry or Peach/Passion Fruit!
