For this recipe you need 200 g dark baking chocolate / 180 g peeled zucchini (1 medium sized zucchini) / 3 eggs / 60 g rapadura sugar (organic wholemeal sugar) / 50 g rice flour (or another flour) / 120 g walnut kernels

Low calorie brownie:the preparation

  1. Grate the zucchini very finely then set aside.
  2. Melt the chocolate in a bain-marie.
  3. Separate the egg whites from the yolks and beat the yolks with the sugar until the mixture whitens.
  4. Add the flour.
  5. Mix then add the melted chocolate and grated zucchini.
  6. Preheat the oven to 180°C (th. 6).
  7. In a bowl, whisk the egg whites and gently fold them into the batter using a spatula.
  8. Add the walnut kernels and mix gently.
  9. Pour the batter into a silicone mold about 20 cm square.
  10. Put in the oven for about 25 minutes then let cool before unmolding and cutting into squares.
