Miso soup recipe:here's how to make this light and so tasty Japanese soup!

For 4 people you need:

  • 500 cl of water
  • 15 cl of dashi broth in sachet
  • 250g fresh firm tofu
  • 100g miso paste
  • 10g dried wakame seaweed
  • a few shiitake mushrooms
  • 1 spring onion
  • Seasonal vegetables such as snow peas, leeks (optional)
  • A mix of shichimi togarashi spices (optional)

Preparation steps:

  1. Peel and cut the vegetables you want to put in the soup, then steam them. Reserve.
  2. Cut the tofu into small cubes.
  3. In a saucepan, heat the water and dashi over low heat (do not boil) for 4 minutes.
  4. Add the tofu cubes.
  5. In a separate bowl, pour some broth, add the miso paste and stir to dilute.
  6. Add this mixture to the pan and stir to combine the flavors.
  7. Add the wakame seaweed, the minced spring onion and the other vegetables you have chosen. Heat for another 2 minutes.
  8. Taste, the mixture should not be bland. If needed add some shichimi togarashi spices.
  9. Serve in small individual bowls and enjoy!
