Tiramisu with speculoos from Cyril Lignac:a tasty and ultra-gourmet recipe as we like ("It's super easy to make!")

The tiramisu how good is that! Creamy and tasty, this Italian dessert made with eggs, sugar, cold coffee, mascarpone and ladyfingers know how to tickle the taste buds of gourmets. So much so that today there are many variations of tiramisu , suitable for all tastes. In addition, the chef and pastry chef Cyril Lignac has its own speculoos tiramisu recipe . Enough to give spicy, slightly caramelized flavors to this ultra-gourmet speciality.

The recipe for tiramisu with speculoos revisited by Cyril Lignac

Preparation time 20 minutes.
Resting time:6 hours.

To make the speculoos tiramisu , for 6 people, by Cyril Lignac you need:

  • 3 eggs
  • 3 tablespoons caster sugar
  • 250g mascarpone
  • 18 speculoos
  • 1 tablespoon of Marsala (an alcohol produced in the Marsala region of Sicily)
  • 6 tsp unsweetened cocoa powder
  • 1 pinch of salt
  • 6 glasses or a large glass dish

Preparation steps:

  1. Into two bowls, break the eggs and separate the whites from the yolks.
  2. Whip the egg yolks, incorporating the sugar, until the whole whitens.
  3. Add the mascarpone and the Marsala, mix until you obtain a smooth cream. Book cool.
  4. Beat the egg whites with a pinch of salt, they must be firm.
  5. Using a spatula, gently fold them into the mixture without breaking them.
  6. In the bottom of the glasses, crumble the speculoos then cover them with the egg/sugar/mascarpone mixture. Alternate layers twice.
  7. Cover then refrigerate for 6 hours.
  8. When ready to serve, on top of the tiramisu, crumble speculoos again and add the cocoa powder. Enjoy!

Chef's tip: to give a fruity touch to the dessert you can add some pitted morello cherries in the bottom, with the speculoos crumbs.
