Cyril Lignac's strawberry soup:a delicious and simple recipe, perfect for sunny days

It's official, strawberry season is thrown ! As soon as the fine weather arrives in April, this vitaminized fruit packed with antioxidants can be found on the stalls of greengrocers. There are hundreds of varieties of strawberries , which are distinguished by their shape (round, conical…), their taste (tangy, sweet…), their origin and their time. Among the most popular are some spring strawberries like the famous Gariguette , juicy and melting with its sweet and tangy aromas, Ciflorette full of flavors or the Cigaline with its orange color and slightly musky taste. Chef Cyril Lignac's secrets for making a tasty strawberry soup

On RTL , the favorite French chef shared his tips to choose your strawberries and extract all their flavors . First, it is important for a soup recipe to take ripe, damaged or even spoiled strawberries . They will already be much cheaper, but also, they lend themselves better for a broth. Finally, to recover the good taste of the fruit, after having cooked it in a bain-marie with other ingredients, you must delicately filter the strawberries with a small Chinese, without crushing them.

The recipe for Cyril Lignac-style strawberry soup

To make strawberry soup you will need:

  • 300g strawberries
  • 20g brown sugar
  • 1 lemon
  • Mint leaves
  • Coriander leaves

Preparation steps:

  1. In a bowl, crush the mint and coriander leaves in a mortar.
  2. Squeeze the lemon and add the juice to the mixture with the sugar.
  3. In a saucepan, cook the strawberries in a bain-marie.
  4. Add a background of water and the previous mixture. Mix a little.
  5. Close tightly with cling film and cook for 20 minutes.
  6. Infuse until the strawberries turn white. Cooking will remove the juice from the strawberry, without having the pulp of the fruit.
  7. Once cooked, take a strainer and gently strain your juice into a container without crushing the strawberries. Leave to cool.
  8. Cut fresh strawberries and pour them into your cooled juice.

The chef's tip: add whipped cream or vanilla ice cream with a little orange supreme to make the strawberry soup creamy and give it some pep.
