A homemade summer Italian dish full of colors and flavors. The pesto rosso, made from sun-dried tomatoes, ground almonds, garlic, basil and parmesan, flavors pasta and vegetables. To this we add strips of smoked bacon for more indulgence and good fats.

The chef's tip to make a success of your salad is not to put the pasta in the refrigerator because it changes its consistency.

The recipe for cold pasta salad with pesto rosso by Cyril Lignac

To make Cyril Lignac's pasta salad you need for 4 people:

  • 250 g penne
  • 125 g sun-dried tomatoes
  • 20 g ground almonds
  • 50 g parmesan cheese
  • 1 clove of garlic
  • 20g fresh basil leaves
  • 1 piece of parmesan cheese, 50g
  • 2 slices of smoked bacon
  • 200g cherry tomatoes
  • 100 g peas
  • 200g fresh baby spinach
  • 1 zucchini
  • Olive oil
  • Salt and pepper

Preparation steps:

  1. In a blender (or in a salad bowl with an immersion blender), pour the dried tomatoes, ground almonds, garlic clove, grated parmesan and basil leaves. Mix everything then pour the preparation into a container.
  2. Coat the preparation with olive oil and set aside in the fridge.
  3. In a pot of salted boiling water, cook the pasta. Drain them then pour a drizzle of olive oil. Mix it all up.
  4. Cook the peas and set aside.
  5. On a cutting board, cut the smoked breasts into thin strips like bacon bits. Cut the zucchini into thin strips.
  6. In a hot skillet, brown the bacon bits then set them aside on absorbent paper.
  7. In a large salad bowl, combine the pasta, pesto rosso and bacon bits. Then add the cherry tomatoes previously cut into quarters, the peas, the spinach leaves and the zucchini strips.
  8. Season everything with salt, pepper, add a few shavings of parmesan. Serve and enjoy!
