Recipe:Brooks Amsterdam granita

It's great that the sun is shining again. Doesn't this immediately get you hungry for a summer recipe? Brooks' granita in Amsterdam is a great start to hopefully a great summer. Eat the granita, as one does in Sicily, along with a brioche for breakfast. Or really unpack, get oysters at home and make a delicious amuse-bouche. In a transparent prosecco glass for dessert is also not a bad option.

Granita supplies
350 g lime or lemon juice
150 g gin
150 g water
150 g sugar

Preparation time:4 hours and 10 minutes

  1. Put the sugar and water in a saucepan and turn the heat to medium/high. When the mixture is boiling well and the sugar is no longer visible, turn off the gas and pour the mixture into a bowl. Let it cool for 10 minutes and then put it in the fridge.
  2. Squeeze fresh lime or lemon juice. Make sure you use the citrus juice immediately, because it loses its flavor after 30 minutes.
  3. Then take the cooled sugar water and pour it into the citrus juice. Stir well and cover with plastic wrap.
  4. Put in the fridge and stir the mixture with a fork every hour. After 3 to 4 hours it is firm enough.
