Tips for smoking meat on the BBQ

Grilling is easy – if you do it right. The right temperature, good ingredients, a little knowledge and a little care are usually what you need. But one form of grilling is still often reserved for the "pros":smoking. We think it's high time everyone learned this simple yet absolutely essential grilling finesse.

The most effective flavoring
– What everyone can and should do in any case is try some wood chips and feel the effect. Leaving aside salt, pepper, and marinades, there's nothing in the world that adds more flavor. And then it's cheap, simple and means you get the most out of the raw material.
While we often associate smoking with heavy flavors like whiskey and oak, the range of what kind of barbecue meats we can smoke is almost endless.
– There is an incredible amount of fish that gets good when smoked. Preferably with slightly lighter woods, such as apple and cherry. Best of all, this works on all types of grills.

Scary and liberating
– It's incredibly simple. It's like going to the store and buying a new spice for the salmon fillet if you've always used lemon pepper:a little scary, and very liberating.
Like the amount of charcoal and briquettes on charcoal grills, we have the tendency to exaggerate when it comes to smoking.
– Holding the holder. Then you can put the lid on and look at the smoke. If the smoke is yellow, it is not ready yet. When it's white – as it will eventually be – it's ready to grill.

Start with fruit
The selection of smoking articles out there is large. However, we recommend the taste of fruit as a starting point in an early phase of the experiment.
– Many people associate heavy flavors and gigantic cuts of meat with smoking, but there is so much that benefits from this – from cheese and vegetables to chicken and mussels. Not only does the taste improve, but the color also becomes stronger and more vibrant. And notice the smell when you smoke something on apple chips, for example – it smells and tastes like real apple.
When it comes to smoking barbecue food, there is really only one procedure that applies. It thankfully features dropped shoulders for an aspiring grill master;
– Experiments. Try things out, taste it, try again. Suddenly you come across the world's best combination. Find your favorite smoked dish!
