Recipe:Italian pizza and pizza sauce

More and more people are discovering how easy it is to make Italian pizza on the barbecue. We love Italian pizza – and have sophisticated recipes and methods for creating the perfect pizza – with a delicious thin and crispy base and pizza sauce with just the right acidity and sweetness. Here's the secret:

Pizza base
Ingredients
To make 4 pizza bases:
500 grams of tipo flour 00
2 teaspoons dry yeast
2 tablespoons olive oil
1 tsp salt
1 teaspoon sugar
310 grams water

This is what you do
Mix all dry ingredients in a food processor and mix together. Pour olive oil and water into the pan and let it run on medium speed for 15 minutes. Add a little more liquid or flour until you get a perfect consistency on the dough.

  • Put some flour on the counter and put the dough on it. Knead it together and put it in a bowl. Cover with plastic wrap and let rest for about 30 minutes to double the size.
  • Knead the dough again and divide it into 4 equal pieces. Each piece of dough should be about 190 grams. Roll together into fine and round rolls.
  • Place on an oiled baking tray. Rub a little water on it and cover with plastic wrap. You do this to keep the bottom smooth and not to dry out the edges. Place the dough in the fridge for about 20 minutes.
  • You can let the base rest in the fridge for a few hours, or prepare the pizza bases the day before you start making the pizza. The pizza is best when baked on a high heat and feel free to use a pizza stone for an extra crispy bottom.

Pizza sauce
Ingredients
To make sauce for 4 pizzas:
5 good tomatoes
1 shallot
0.5 teaspoon sugar
0.5 tsp salt
0.5 tablespoon good olive oil olive
0.5 dl red wine
4 cloves garlic
0.5 box of canned tomatoes

This is what you do

  • Start by halving the tomatoes and place them in an ovenproof dish. Sprinkle with sugar and a little olive oil. Place the garlic cloves with their skin in the same mold and put in the oven at 180 degrees for an hour.
  • The result is sweet, baked tomatoes and garlic. Cut the shallot and put in a pan with a little olive oil and fry over medium heat until shiny and soft.
  • Add red wine and cook until red wine is almost used up. Add the canned tomatoes and cook for a few minutes. When the tomatoes and garlic are baked in the oven, put them in the pan (don't forget to peel the garlic).
  • Make it completely smooth with a hand mixer. Season with salt and possibly sugar. Cool the pizza sauce. If you want a completely smooth sauce, you can strain it.
