Recipe:Jackfruit stew with cauliflower and pumpkin

Ingredients

for 4 persons
3 Roma tomatoes, diced
2 packs Rootzz of Nature Vegetarian Jackfruit Pieces
2 cloves garlic, crushed
2 bay leaves, dried
1 onion, in rings
400g pumpkin, peeled and diced
400 g cauliflower, in florets
15 g fresh parsley, roughly chopped
400 ml vegetable stock
2 tsp ground cumin
2 tsp paprika powder
sunflower oil
salt and pepper

Preparation method

1. Heat sunflower oil in a deep-bottomed skillet over medium heat. Fry the onion for a few minutes and then add the garlic, pumpkin and cauliflower and fry for 4-5 minutes.
2. Add the vegetable stock to the pan followed by the tomatoes, ground cumin, paprika and bay leaves and simmer gently for 25 minutes. Season with salt and pepper.
3. When the stew is simmering for another five minutes, heat sunflower oil in a frying pan over a high temperature and fry the Rootzz of Nature Vegetarian Jackfruit pieces for 2-3 minutes until crispy.
4. Remove the bay leaves from the stew. Taste and season with salt and pepper if desired. Add the jackfruit pieces to the pan at the last minute and stir well.
5. Serve immediately and garnish with fresh parsley.
