Wok-fried rice noodles

Ingredients for 3 people

  • 175g rice noodles
  • ½ red pepper
  • 75g bean sprouts
  • 35g peanuts (unsalted)
  • 1 lime
  • 65ml soy sauce
  • 35g olive oil

Preparation

Boil salted water in a saucepan, adding a little olive oil, and cook the rice noodles in it. 6-7 minutes should be enough for them to be cooked through. Drain with your colander.

Start heating your wok now.

Cut the pepper lengthwise, then remove its seeds and white filaments.

Then squeeze the lemon to get as much juice as possible.

Coarsely crush the peanuts, and fry them in the hot wok until they are golden brown.

Then heat the olive oil in the wok, and sauté the bean sprouts until they become transparent. Gently stir in the finely chopped chilli and brown for 1 or 2 minutes.

Then add the rice noodles and sauté everything, stirring with plastic chopsticks or a wooden spoon, while drizzling with soy sauce and lemon juice.

Cook for 2 or 3 minutes, continuing to stir and adding salt and pepper.
