Button mushroom tart

Ingredients

  • a shortcrust pastry
  • 260g button mushrooms
  • 1 lemon
  • 30g flour
  • 2 glasses of milk

Preparation

Start by unrolling the dough in a pie dish, and prick the bottom with a fork. Put directly in the oven thermostat 6, 180°C for about twenty minutes.

During this time you can prepare your mushrooms. To do this, remove their sandy feet before washing them and cutting them into strips.

In a saucepan, pour a teaspoon of lemon juice, a knob of butter and a tablespoon of cold water. Also add salt and pepper, then boil the mushrooms for 5 minutes over low heat.

For the sauce, melt 30g of butter over low heat. Add 30g of flour and mix until you get a frothy mixture.

Add two glasses of milk to which you will have mixed a little cooking juice from the mushrooms. Let everything cook very gently for about ten minutes.

To finish, add the mushrooms to the sauce, and garnish the pie.

Bake at thermostat 6, 180°C, for 10 minutes.
