Wild boar pâté

Ingredients

  • 3 kg of wild boar
  • 1 onion
  • 1 kg of fat
  • 1 whole boar liver
  • 20g of salt
  • 4g pepper
  • 3g cinnamon
  • 6g flour
  • 2 bay leaves
  • 1 or 2 sage leaves
  • 2 or 3 sprigs of thyme leaves
  • 1 handful of parsley
  • 90g onion
  • 1 large clove of garlic
  • 30 g of cream
  • 1 egg

Preparation

Grind bay leaf, sage, thyme, parsley, onions, garlic… before mixing all the ingredients.

Put in jars with a bay leaf on top and cook in the sterilizer for at least 3 hours.
