Vermicelli salad with prawns (Thai)


Ingredients:4 people
  • Dried soy vermicelli
    200 g
  • fish sauce
    2 tablespoons
  • lime juice
    1 tablespoon
  • vegetable oil
    1 tablespoon
  • garlic
    1 crushed clove
  • Roasted Unsalted Peanuts,
    35g
  • coriander
    a few cilantro leaves
  • de-seeded and minced fresh red peppers
    2
  • cooked prawns peeled with the tail.
    1 kilog

Put the noodles in a bowl and cover them with boiling water. When they are soft and well puffed up, drain them then coarsely cut them with kitchen scissors.

Whisk together the fish sauce, lemon juice and crushed garlic to obtain a homogeneous sauce.

Put the noodles in a bowl with the dry-roasted and coarsely crushed peanuts, onions, coriander, peppers and prawns. Add the seasoning and mix. Serve immediately.
