Granny-smith tartare and raw sea bream with quinoa

Preparation:25 minutes

Cooking:15 minutes

For 6 people:

  • 2 granny smith apples
  • 1 sea bream of 800 g
  • 125g quinoa seeds
  • 1/2 stalk of celery
  • juice of a lemon
  • 1/2 bunch of fresh cilantro
  • olive oil
  • Salt and ground pepper

Development:

  • Fillet the sea bream and remove the skin and bones.
  • Cook the quinoa seeds in salted boiling water for 10 to 15 minutes (1 part quinoa to 2 parts water). Leave to cool
  • Cut the apples into quarters, remove the seeds and cut the flesh into small cubes, keeping the skin on. Sprinkle them with half the lemon juice
  • Cut the sea bream into small cubes and the half stalk of celery into thin strips
  • Prepare the dressing by mixing the remaining lemon juice with 4 tablespoons of olive oil. Salt and pepper from the mill
  • Just before serving, mix all the ingredients, sprinkle with chopped coriander and season
  • Present in verrines.
