Fresh salad of Bibb lettuce and peppers, horseradish vinaigrette

First grill the red, green and yellow peppers, once very black, rinse them under tap water, rubbing to remove the skin, then cut them into julienne strips .

Scrape the baby carrots, grate half and cook the other half al dente, cool and set aside.

Wash and shred the lettuce.

Prepare a vinaigrette with a teaspoon of horseradish, a tablespoon of old-fashioned mustard, salt and pepper, 25 cl of grapeseed oil.

Arrange the lettuce leaves on a plate, scatter the peppers over them, and the grated carrots, decorate whole baby carrots.

Present the sauce in a sauce boat.

Bibb lettuce, also known as limestone lettuce, is a variety of buttery, delicate, and crunchy lettuce. It was first grown by Jack Bibb, an amateur horticulturist from Kentucky, in the late 1800s, where his name originated. However, it is also known as limestone lettuce due to the limestone in the soil where it was first grown.
