Roasted cod with tarragon and herbs

  • dried tarragon

  • Sichuan pepper

  • freeze-dried pink berries

  • coarse sea salt

  • white armagnac (folle) or other white alcohol
    1 shot glass
  • herbes de provence
    1 tablespoon
  • olive oil
  • skinless cod

Preheat the oven to 200°C.

In a mortar, pound together:pink peppercorns, Sichuan seeds and coarse sea salt, until you obtain a powder.

Arrange the piece of cod in a stainless steel dish.

Sprinkle the mortar powder, chopped tarragon and Provence herbs on top.

Chopped shallots.

Add the armagnac.

Pour a drizzle of olive oil over the fish.

Bake for about fifteen minutes, check the cooking by pushing the blade of a knife into the fish, the blade must be hot.

Arrange as is or on a serving platter.
